- Préparer une crème pâtissière : battre les jaunes avec le sucre. Y incorporer une louche de lait bouillant puis remettre le tout dans la casserole sur le feu et mélanger au fouet vigoureusement jusqu'à épaississement. La laisser refroidir complètement.
- Préparer une crème chantilly en y incorporant à la fin le mascarpone. Elle doit être bien épaisse. La rajouter dans la crème pâtissière pour la rendre aérienne.
- Procéder au montage. Une couche de génoise, une couche de crème, une couche de framboises. Finir par une couche de crème. Recouvrir d'une crêpe

- Le lendemain ou après quelques heures au frais enlever le cercle à pâtisserie, mettre de la crème tout autour et faire coller des bandes de crêpes. Décorer avec des framboises.
