- Stack all the spinach leaves, roll it and chopped it long. Add all the leaves to a boiling water and blanch them for a minute. Refresh in ice cold water immediately.
- Wash all the dals with clean water and soak it in water for half an hour. In a pressure cooker add all the dals along with salt, turmeric and water. After 4-5 whistles turn off the flame and cool down at room temperature then open the lid.
- Heat the ghee in a pan, add cumin seeds, hing, dried red chilli, garlic and onions.
- Now add curry leaves, grated ginger and chopped green chillies. Saute on medium flame for 2-3 minutes.
- Add tomato puree, mix it well and cook for 2-3 minutes.
- Add the cooked dals and all masala. Give it a nice stir.
- Add the blanched spinach, lemon juice and garam masala. Cook it for 2 minutes.
- Garnish with fresh chopped coriander leaves.
- Serve hot with rice, roti or paratha.
