- 1 litre lait
- 200 grs sucre en poudre
- 3 gros œufs
- 60 grs fécule de maïs
- Extrait de vanille
- Beurre
Instructions to make to make Flan pâtissier
- Étaler la pâte feuilletée et la déposer dans le cercle (24cms de diamètre) préalablement beurré et poser sur une plaque allant au four recouverte d’un papier cuisson et réserver au froid pendant 30mns à 1h
- Dans une casserole porter le lait avec l’extrait de vanille à ébullition.
- Dans un saladier (ou au robot) faites blanchir les œufs et le sucre au fouet puis ajouter la fécule et continuer à mélanger
- Verser 1/3 du lait chaud dans le saladier et mélanger
- Verser le mélange dans la casserole contenant le reste de lait et laisser cuire quelques mns sur le feu en remuant. Le mélange doit épaissir.
- Verser le mélange chaud dans la pâte et laisser refroidir à température ambiante. (Vous verrez la pâte qui recouvrait toute la hauteur du moule diminuer en hauteur mais elle restera au dessus du niveau de l’appareil à flan)
- Pendant ce temps préchauffer les four à 170° en chaleur tournante
- Une fois l’appareil à flan refroidi, enfourner au tiers supérieur pendant 40-45 mns
- Une fois cuit laisser refroidir au moins 1h voir 1h30 avant de démouler
